Mexican Baked Beans
Mexican Baked Beans is a comforting dish that is sure to
bring a gush of flavours to your tastebuds. It’s all about some baked beans and
toasts to kick start your day. The ingredients count in onion, garlic, borlotti
beans, oregano, chipotle paste, tomato puree, bacon lardons, parsley, crusty
bread, salt and pepper.
Start with frying onion and garlic on medium heat until it's softened. Add some chipotle paste and bacon and cook for 10 minutes. Next, add the oregano and borlotti beans. Pour in a little water and stir the puree. Top it with butter, add some salt and pepper as per your taste. Now, toast your bread and spread the scrumptious puree on your toast. Sprinkle a bit of parsley, parmesan and some olive oil in the end!
Huevos Rancheros

the making include cherry tomatoes, red chilli, cooking chorizo, spring
onions, eggs, feta cheese, tomato passata, burrito wraps, and some more.
First, you have to prepare the red sauce with tomatoes,
onions, chilli, chorizo, salt, passata, chicken stock, and black pepper. Now,
let it simmer on low heat. Next, stir fry some red chilli and spring onion,
take them off the heat, chop them nicely and set them aside. After this, make
some space for eggs in your sauce’ pan, crack and carefully add the eggs in.
Cover it up and let them get cooked. Do not overcook if you want your yolks
runny. Once done, remove the pan from heat, garnish with spring onion and
chilli you set aside earlier, add some feta cheese, chorizo and coriander on
top. Serve it in a bowl with some beans and folded burrito on the side!
Eggy Bread with Guacamole

would need are eggs, chipotle paste, flour, butter, white bread, tomatoes,
parsley, guacamole, salt and pepper.
First, whisk the eggs with chipotle sauce, salt, pepper, and
flour. Heat up the oil and butter. Dip the white bread in the egg mixture, soak
it on both sides and place it in the hot pan to fry. Wait for it to turn golden
and crisp. Meanwhile, add some whole tomatoes in a pan, let them get a little
soft and charred. Serve the crispy eggy bread with a spoon full of guacamole
with the tomatoes on top. Sprinkle some parsley on top at last!
